Braise, roast, bake or proof to perfection. Cook and serve your food when you want to, with that fresh, just cooked quality and taste. This commercial warming oven holds up to 10 x 65mm depth GN1/1, ready to serve.
The Halo Heat surrounds food with even, radiant heat. No hot elements, fans or added humidity. Your meals stay crisp and succulent, without fear of overcooking, protein shrinkage or drying out.
Conveniently record HACCP data for compliance on a USB. The HCCP data logger automatically tracks food temperature readings, operation mode, date and time.
The oven has a digital display and a simple ON/OFF switch. The cooking temperature knob ranges from 94?C to 160?C and the holding temperature knob ranges from 16?C to 96?C.
There?s no need for water pans, external vents or hoods.
Probes within the oven sense the temperature of the product. Once the food is cooked, the oven automatically converts from cooking mode to holding mode. Otherwise, cook your product to the time you specify. Then the holding cabinet will take over until you?re ready to serve.
Widen your menu options. The cook and hold oven can turn underutilised cuts of meat into succulent, tender products. One to two days of dry ageing is merely one hour in the cook and hold oven.
